Cold Weather…Hearty Dishes

Rainy Monday, snow on Tuesday, this can only mean that tomorrow, Wednesday, the official first day of spring will bring the much-anticipated warmer weather we’re all waiting for.  Yea…right, perhaps if we weren’t in Michigan!  Last year around this time our temperatures were hanging right around 70 degrees, I could handle that again this year.  But it’s not to be, we’re expecting snow and temperatures in the low 30’s tomorrow, but that’s OK, for now anyway because I know that spring is just around the corner.

Sunday was a busy day for us, we were celebrating Joshua’s 9th birthday at our house so I wanted to make something for breakfast that didn’t require me to stand over it, flip it, turn it and keep it warm until the next batch was ready so I decided to make a breakfast casserole.

I found this recipe on Pinterest awhile ago and decided that Sunday was the perfect day to try it.  While it was baking in the oven and I set about the house getting a few final things done before the party, the house filled with the wonderful aroma of sausage and biscuits.  It even brought Walt and Eric up from the basement to see what I was making and when it would be done.

We were not disappointed…this breakfast casserole is flavorful, hearty and delicious, even I had two pieces.  I served it with fresh strawberries and orange juice and we had left overs for two days, Walt loved that.  This recipe is easily adaptable to cut in half….in fact I may do that the next time and bake it in an 8×8 square baking dish.

This would make a great pot luck brunch dish, there is certainly enough to feed a crowd.  In fact, the first thing I thought of  was that I just might make it this Christmas for the “Rezich” family Christmas brunch at Walt’s sister’s house this year.  I am usually the one who brings the cheesy potato casserole, but I think I just might have to do both!!

COUNTRY GRAVY AND BISCUIT CASSEROLE

Country Biscuit and Gravy Casserole

 What You’ll Need:

1 pkg.   Bulk sausage your choice (I used Bob Evans)
1 pkg.    McCormick Sausage Gravy Mix
1 cup     Cheddar Cheese (I used more about 1.5)
6            Eggs
½ cup  Milk
1 can     Pillsbury Grands Biscuits

Salt/Pepper to taste
