Breakfast And Brunch Recipes

We love breakfast at our house, especially big breakfast weekends!  On this page we’ll share our favorite breakfast recipes with you from creamy swiss eggs to a simple sausage casserole.  Remember, breakfasts make great dinners too!!  As always this page is a work in progress, check back from time to time for new recipes and updates!

CREAMY SWISS EGGS AND BISCUITS

Breakfast

What You’ll Need:

4 Pillsbury® Grands!® Frozen Buttermilk Biscuits (I used biscuits in a can not frozen)

1 Can (10 3/4 oz) Condensed Cream of Chicken with Herb

2/3 Cup milk

1 Cup Shredded Swiss cheese (4 oz)

1/8 teaspoon

6 eggs (You could add more and it would still be creamy)

2 medium green onions, sliced (2 tablespoons)

2 teaspoons butter or margarine

Directions

  • Heat oven to 375°F
  • Bake frozen biscuits as directed on bag
  • Meanwhile, in small bowl, mix soup, milk, cheese and pepper; set aside
  • In medium bowl, beat eggs with wire whisk
  • Stir in 1 tablespoon of the onions
  • In 8-inch skillet, melt butter over medium heat
  • Add egg mixture; cook 4 to 5 minutes, stirring occasionally, until eggs are thoroughly cooked but still moist
  • Gently stir soup mixture into egg mixture
  • Cook and stir until thoroughly heated
  • Split each warm biscuit; place on individual serving plate
  • Spoon egg mixture over biscuits
  • Sprinkle with remaining onions

CRUSTLESS QUICHE

Crustless Quiche

What You’ll Need:

6 large eggs

2 Tbsp. Sour Cream

8-10 slices of bacon cooked and chopped

1/4 cup of green pepper chopped (you can add red, yellow or orange as well)

1 small tomato – seeded and chopped

1/2 – 1 cup shredded cheddar cheese (depends on how cheesy you like your Quiche)

Directions:

  • Pre-heat oven to 350 degrees
  • Spray an 8×8″ baking dish with Pam
  • Crack eggs into a bowl, add sour cream and whisk
  • Pour into baking dish
  • Spread green pepper and tomatoes over the egg mixture
  • Spread the bacon over the peppers and tomatoes
  • Spread cheese over the top of the bacon
  • Bake for 30 minutes or until knife inserted into center comes out clean

SAUSAGE BISCUIT GRAVY (DOWN HOME SAUSAGE BISCUIT GRAVY)

Sausage Gravy

What You’ll Need:

1 16 oz pkg            Bulk breakfast sausage (I use Bob Evans Maple, you can use any)

1                              Small onion – chopped

6 tbsp.                    Flour

2 – 12 oz. cans       Nestles Carnation Evaporated Milk

1 Cup                      Water

1/4 tsp.                   Salt

Hot pepper sauce to taste (Start with 1/8 tsp – increase to taste)

Hot Biscuits

**Couple tablespoons of bacon grease – optional**

Directions:

  • Cook sausage and chopped onions, stirring and breaking up the meat until sausage is cooked through
  • Add flour – mix well
  • Stir in evaporated milk, water, salt and hot sauce
  • Cook, stirring occasionally until mixture comes to a boil
  • Reduce heat to medium low; cook for about 5 minutes until mixture becomes thick
  • Serve over hot biscuits

SAUSAGE BREAKFAST CASSEROLE

Breakfast Casserole

What You’ll Need:

1             8 Count Crescent Roll – (Original)

1 lb.       Roll or bulk breakfast sausage

6            Eggs

2 tbsp.  Milk

1 cup Swiss Cheese (or cheese ofyour choice)

Salt and pepper

Directions

  • Pre-heat oven to 350 degrees
  • Brown sausage breaking it into small chunks as it cooks – Drain grease
  • Roll our Crescent rolls in the bottom of a 13×9″ baking dish make sure you pinch the seams together
