Papa and Grandma Do The Country Club!

Gottcha!!  Country Club Chicken that is…..bacon, onions, mushrooms, apples too!  Mix in a little white wine and sharp cheddar cheese and you’ve got a fantastic meal!

If you can believe this, I don’t have anything specific to chat about today!  We’re rolling into the school year with our grandchildren, schedules and routines will start slipping into place as they all begin their fall activities and interests.  In fact, Joshua’s first football game will be played this Sunday, Papa and I love watching the kids play flag football, it’s so much fun.

I have nothing special planned for today; maybe run a few errands and work on a little writing.  I have a couple of pre-ordered candy bouquets I need to gather material for so I’m not running last-minute and as I do every day, hit the job boards to see what new jobs are posted out there.

With that said….today we’re just going to slide right into the recipe…..I found this recipe on Pinterest, which lead me to KAYOTIC KITCHEN, originally posted December 12, 2011.


1 pound spaghetti (I only used 1/2 lb)

4 chicken breasts 1 large onion

7 oz mushrooms  (I used 8 oz. already cleaned and pre-sliced)

2 can concentrated cream of mushroom soup

4 or 5 slices bacon

1/4 cup dry white wine

2/3 cup sharp cheddar (I used 1 cup)

1 apple

butter or oil

salt & pepper


Mince the onion.

Clean and slice the mushrooms. (Unless you do what I did and buy them cleaned and sliced)

Peel and mince the apple (or wash it well)

Season the chicken breasts with a generous amount of salt and pepper.

Cook the bacon and don’t clean out the pan

 Drain the bacon on a paper napkin

Add a bit of butter and quickly brown the chicken breasts on both sides. Transfer them to a casserole.

Cook the onions until opaque (1-3 minutes)

And add the mushrooms – Cook 3 minutes

Add the minced apple and cook it all for another 3 to 4 minutes

Season with a pinch of salt and pepper and crumble the bacon in there

Pour in the white wine

Note: If you don’t like wine try chicken broth

Add the soup

Add Sharp Cheddar Cheese – I added 1 cup

Mix all together until bubbly and cheese is melted

And pour it all over the chicken breasts

Put the casserole in a preheated oven at 350F (175C) for 25 to 30 minutes

until the chicken is super tender and the sauce is all hot and bubbly

Cook the spaghetti according to the directions on your package

Serve chicken breast with sauce over spahetti noodles
