Eric’s Birthday Bash

Yesterday, Sunday, was perfect, we all gathered to celebrate lil E’s 4th birthday.  There were munchies and dips, hot dogs, hamburgers, potato salad and macaroni salad too.

There was swimming for the kiddies, sitting and chatting for everyone else.  It was nice, we were able to chat and catch up with friends and family that we don’t always get to see on a regular basis.

Of course there was cake….

And of course there were lots and lots of really great presents!  Nerf guns and roller skates, walkie talkies too, hot wheels, play tools, neat new clothes to try on and some cool cash to buy some !!!   Grandma took photo’s of all of Lil E’s gifts but I’ll highlight just a few them …….

Lil E is a lucky little boy, he had a great day and received a lot of really nice gifts.  Lil E thanked everyone for his gifts and coming to celebrate.  He gave all of the kids little goodie bags filled with candy, whistles, yoyo’s, balls, and more.

Everyone had a great time!

Today I’ll leave you with my macaroni salad.  It doesn’t have any special ingredients, nothing that will make you ask, “oh what it that?”  It’s tasty and only has a few ingredients, it’s simple to make.  This is just a plain macaroni salad, however, if it wasn’t such a big crowd at Nikki’s, I would have added a can of tuna to it because that’s what most of my immediate family prefer.

Macaroni Salad

Nancy’s Macaroni Salad

What You’ll Need:

1 lb              Elbow Noodles

2 Cups        Chopped vegetables (your choice, green onions, cucumbers, green peppers, celery)

2.5 Cups     Miracle Whip

Salt and pepper to taste

Directions:

  • Cook pasta as directed on package – drain
  • When pasta has cooled add chopped vegetables
  • Mix in Miracle Whip
  • Refrigerate to chill

NOTE:  You can add hard-boiled eggs chopped into the salad or sliced on top
