One Little Chicken Goes A Long Way…..

It’s Saturday…..YEA!!!   And since it’s Saturday today’s entry won’t be very long.

As most of you who have followed me for a while know, I love rotisserie chickens for many reasons, here are my top 5.

  1. I don’t have to cook
  2. They are relatively cheap – $4.99 where I live
  3. They make multiple meals for us
  4. Using them cuts prep time for recipes
  5. They are moist and delicious (I have not had a bad one)

Earlier this week I bought one to make shredded bbq chicken and coles law sandwhiches….Yummy!  The recipes for both of these was posted earlier in my blog.

With the leftovers we made bbq chicken pizza, delicious and much better than pizza delivery!!

BBQ Chicken Pizza

What You Will Need

Cut up or shredded cooked chicken

Famous Dave’s Sweet and Zesty BBQ Sauce

1-1/2 to 2 cups Gouda Cheese (we like a cheesy pizza)

1 red onion diced

1 pizza crust (either fresh or pre-made)

Directions

Mix shredded chicken with some of the bbq sauce to moisten (mix to taste)

Spread about 1/4 cup of sauce (more or less to taste) on pizza dough

Spread the chicken mixture over the sauce

Top with onions

Top with cheese

*Bake at 425 degrees for 15-20 minutes

OR

**Grill over indirect heat for about 20-25 minutes

ENJOY!!

NOTE:  You really want to be careful how much bbq you use, too much can make a soggy pizza

DELICIOUS!!
